Tito Fuego's Salsa Tuesday at The Mezzanine has a rooftop. Salsa Thursday, indoors at NBE, doesn't. After a decade together, the split left Tito with the rooftop draw — and that single difference is driving the gap.

With no cover charge, Marco's income comes entirely from a negotiated cut of the bar, kitchen, and tables. The model below splits revenue by those percentages — and the terms protect the brand, the recipes, and the crowd from walking off without him, the way Salsa Tuesday did.

Own the chef & recipes

Bring your own chef where possible. Teaching the venue's chef arms a future competitor — the Salsa Tuesday lesson. No written recipes; NDA if you must teach.

Own the brand & data

"Salsa Thursday," its socials, and the guest list belong to Marco — not the venue. If you leave, they leave with you.

Exclusivity + audit rights

Venue can't run a competing Haitian/Salsa night (plus a tail after you part). POS read-access and weekly settlement so the percentages are real.

Oxvelo advisory fee:  Oxvelo serves as advisor and marketing-analytics provider only — the Salsa Thursday brand stays with Marco. For its continued participation in the venture's success, Oxvelo receives 20% of the Net Revenues, rising to 30% on net above an agreed performance threshold.
